Where do you get your ingredients from?
We try to source all our products locally and only use quality Ingredients. We also try to source direct from Aussie Farms where possible.
What are your Food Safety accreditations?
Fresh To Go Foods have HACCP accreditation at each site, plus Major Retail Supermarket accredited programs in each of our major mainland capital cities.
– Regular audits to ensure programs are maintained.
– This ensures each site is reaching the same high levels of food safety.
– Usually 3 external audits conducted every year at each site.
– Working towards GFSI level accreditation on the mainland in 2024.
QA Process:
– National, centralised range of QA procedures including SOP’s, Work Instructions and Process Control documents, to ensure the same processes are used at each site.
– National QA team available to assist site teams with issues, provide support and to monitor for updates to legislation.
– Monitoring via monthly KPI’s to track key metrics at each site.
– Weekly QA meeting with all sites to ensure challenges and changes are discussed and all sites can be involved, supported and aware of what is happening.
Ingredients:
– All raw materials are provided by Approved Suppliers according to our set specifications.
– Fresh To Go Foods also instigate an Approved 3rd Party Supplier Program, including on-site audits where required.
– High risk ingredients such as meats, cheeses, eggs and, poultry are all pre-tested before the approval to use.
– All other ingredients are on a microbiological testing schedule and are tested according to their risk profile.
Allergens/ special diets:
– Robust segregation processes to enable handling of 7 allergens and multiple protein types.
– No peanuts handled on any sites.
– Tested clean-downs completed between protein types.
– Gluten free products available.
– Vegan and Vegetarian products available.
Environmental Micro:
– Rapid swabs completed daily before production to ensure the equipment is clean.
– Extensive swab schedules are instigated to monitor cleanliness of the entire production area.
– Schedule of micro swabs completed to back-up rapid swabs.
– Water testing is completed on a monthly basis to monitor all taps.
– Air testing is also carried out on production air and compressed air.
Temperature:
– Temperature controlled storage, production, picking, despatch and distribution to allow maintenance of the cold chain at all times.
– Continuous 24 hour monitoring of temperatures on all sites with an alert system if any temperatures rise.
– Electronic recording of temperatures and signatures at each delivery point.
– Ability to deliver chilled and frozen products on the same truck.
